Pistachio Cream Filled Chocolate Chip Cookie

 

Ingredients Needed:

• Peppertux Pistachio Cream, for the filling

• 115 g butter, softened 

• 100 g brown sugar

• 50 g granulated sugar

• 1 egg

• 1 teaspoon vanilla extract 

• 180 g all-purpose flour

• ½ teaspoon baking soda

• ¼ teaspoon salt

• 80–100 g chocolate chips

• 40–50 g chopped pistachios

INSTRUCTIONS

  1. Spoon or pipe small portions of pistachio cream onto parchment paper and place them in the freezer. This makes the filling much easier to place inside the cookies without it running out.

  2. Mix together the softened butter, brown sugar, and granulated sugar until well combined.

  3. Add the egg and vanilla and mix again. Add the flour, baking soda, and salt, and mix just until combined. Fold in the chocolate chips and chopped pistachios.

  4.  Take a generous portion of cookie dough and flatten it in your hand. Place a frozen portion of pistachio cream in the center, then wrap the dough completely around the filling and roll it into a ball.

  5. If you’d like, press a few extra chocolate chips and chopped pistachios on top.

  6. Bake in a preheated oven at 350°F (175°C) for about 11–13 minutes.

  7. Remove the cookies when the edges are lightly golden but the centers still look soft.

You are done! Let them rest on the baking sheet for about 10 minutes; they will continue to set as they cool.
